I think I saw the Lords Prayer done on Aida Linen 32 Count but I an mot sure if they used over-stitch or single stitch on it. It is a very small weave.
The best thing to do is decide how big you want the finished piece to be and calculate the desired fabric stitch count base on the pattern stitch count.
